A career built at the standard of five stars.
Lawrence Mattock has spent more than 35 years inside the world's most demanding hospitality environments — luxury hotels, fine-dining restaurants, safari lodges and resorts — across Southern Africa, Europe and the United Kingdom. What he learned there is what he now teaches.

Three decades of hospitality leadership.

Lawrence began his career in fine dining at a time when service was learned by apprenticeship — long shifts under exacting maîtres d', evenings spent perfecting silver service and wine fundamentals, and a daily discipline of guest-first thinking. From those foundations he progressed into restaurant management and then into executive hospitality leadership across luxury hotels and resorts.
His international experience spans Southern Africa, the United Kingdom and Continental Europe, working with properties whose reputations rest on consistency. Over those years he has led food and beverage operations, opened and re-positioned restaurants, mentored hundreds of professionals, and partnered with hotel and lodge owners to lift their service culture.
Today, through Waiters Workshop, Lawrence brings that experience directly to hospitality businesses across Southern Africa — training waitstaff, developing supervisors and managers, and consulting at executive level on operations, standards and guest experience.
